Creamy Pumpkin Pie

(easy & fast!)

(This recipe makes 1 pie. I like to make 2!)

 

1/c C cold milk

1 pkg (6 serving size) vanilla flavor instant pudding mix

1 tsp pumpkin pie spice*

1 C canned pumpkin

2-1/2 C whipped topping (I like CoolWhip Extra Creamy. One 8-oz tub isn't quite enough!)

1 graham cracker crust

 

In large bowl, beat milk, pudding mix and spice with wire whisk for 1 minute.  Mixture will be very thick.  Whisk in pumpkin.  Stir in whipped topping.

 

Refrigerate for at least 2 hours before serving.  Garnish with whipped topping if desired.  Keep leftovers refrigerated.

 

*may substitute 1/2 tsp ground cinnamon, 1/4 tsp ground ginger, and 1/8 tsp ground cloves for pumpkin pie spice
